Watermelon Sorbet….at last

a few posts back I promised a photo of watermelon sorbet. here it is in all of it’s anticipatory glory…..i know, i know, the old rose garnish is entirely too big, i could not help myself for the color….

some tips……you might have to actually be eating part of a watermelon to know “this is the one.” It needs to be sweet to keep up with the lemon juice. The lemon juice is important as a foil, and so that one can have enough sugar to keep the texture of the sorbet soft and creamy. as you can see in the photo there are some rather large crystals and it is not as smooth as I like to make them…..but the flavor is out of this world.
